    This easy butternut squash soup can go from grocery bag to dinner table in less than an hour! With minimal hands-on time needed, it is the ideal meal for a busy family. It’s just what you need for a quick, cozy dinner at home, and it will make your house smell gloriously autumnal. Thank you, butternut squash, garlic and thyme! I love that it’s super healthy, too! 

    The secret to making this soup perfectly smooth is that it is made in a high speed blender (I use my Ascent Series Vitamix).     How To Make Butternut Squash Soup From Scratch

    Making soup from scratch is super easy, promise! This butternut squash soup recipe starts with whole ingredients (apples, squash, onion, garlic) that get a rough chop and are then roasted in the oven. Once everything is beautifully browned, I simply transfer it to the blender. It sounds too easy, but there is no catch! This is truly the best butternut squash soup recipe out there, and the fact that it’s also the easiest is just the cherry on top. Once you make it, you’ll be hooked on this warm, healthy and flavorful fall dinner!

    Ingredients You’ll Need to Make Butternut Squash Soup.

    You could pretty much just shop for everything you’ll need at the farmers market. And that’s our favorite thing to do this time of year! Here’s what you’ll need: 

    • Fresh produce: Butternut squash, onions, apples, and fresh garlic.
    • Herbs and spices: Thyme, nutmeg, cayenne, salt and pepper
    • Stock: Vegetable or chicken stock
    • Cream: A splash of heavy cream makes our butternut squash soup recipe silky and smooth, but you can easily swap it with some canned coconut milk to make it a vegan butternut squash soup. However, if it’s health you’re worried about, a little heavy cream doesn’t undo the fact that this is a veggie-loaded, healthy butternut squash soup!

    How To Make Roasted Butternut Squash Soup

    1. Roast the squash, apples, onion, thyme and garlic. 
    2. Blend all the roasted things together! 
    3. Pour in a little stock, cream, and spices, and you’re done.

    Tips for Making Butternut Squash Soup: 

    • Cut the squash into evenly-sized pieces so everything roasts at the same rate. OR…
    • Buy pre-cubed squash at the grocery store to cut down on prep time for a super quick weeknight dinner
    • Be careful when blending hot liquid! Always keep the blender lid vented (or remove the center cap and cover loosely with a towel). 
    • I like to use juicy, sweet apples. I’ve had good luck with Fujis, Galas, or Honeycrisps. This will add a lovely sweet note to your soup.
    • Topping options are endless! Crispy sage leaves, pumpkin seeds, crumbled bacon, fried shallots, roasted garlic, croutons, roasted chickpeas, pomegranate seeds, a dollop of crème fraîche.
    • Mix up the flavor profile! Try using ginger instead of nutmeg, and adding tablespoon of red curry paste. Top with fresh cilantro and a squeeze of lime.

      Ingredients

      • 1 (2½- to 3-pound) butternut squash, peeled, cut into 1½ inch cubes (about 6 to 8 cups)
      • 1 yellow onion, quartered and layers separated
      • 2 sweet apples, such as Fuji, Gala, or Honeycrisp, cored and sliced
      • 8 garlic cloves
      • 3 sprigs fresh thyme, plus a few leaves for serving
      • ¼ cup extra-virgin olive oil
      • 1 ½ teaspoons kosher salt
      • ½ teaspoon freshly cracked black pepper, plus more for serving
      • 2 cups vegetable or chicken stock
      • ½ cup heavy cream, plus more for serving
      • ¼ teaspoon ground nutmeg
      • ¼ teaspoon cayenne pepper
      • Pepitas, for serving (optional)

      Method

      1. Preheat the oven to 400°F with a rack in the center position.

      2. On a rimmed sheet pan, combine the squash, onion, apples, garlic and thyme. Drizzle with the olive oil and season with 1 teaspoon of the salt and ¼ teaspoon of the black pepper. Toss to coat.

      3. Roast until the squash is fork-tender, 30 to 40 minutes.

      4. Meanwhile, in the last 5 minutes of roasting, bring the stock to a boil in a small saucepan, then reduce to a simmer and keep warm. 

      5. Remove the sheet pan from the oven. Discard the thyme stems, leaving the leaves on the pan. Transfer all the roasted vegetables to a high-speed blender. Add the hot stock, cream, the remaining ½ teaspoon salt, the remaining ¼ teaspoon black pepper, the nutmeg, and cayenne. Let cool briefly. Secure the lid, keeping the lid plug slightly vented.

      6. Turn the blender on and slowly increase to the highest speed. Blend until smooth. 5 to 6 minutes.

      7. Pour into bowls and serve topped with a drizzle of cream, thyme leaves, pepper and pepitas, if using.

        I don't have any fresh thyme and all I have is ground thyme what would you recommend I do?

        Use less! The dried ground thyme will be stronger, so start with half the amount called for and adjust for taste as you go.

        I'm just about to head out and make this. Instead of using apples, I think I'll just toss in a pint of applesauce that I made in the fall. I plan to make it even easier by just cooking it all together in the pressure cooker. I'm glad that it will be thick. I've had a squash sitting on the counter for way too long, so it will be nice to have finally used it. It's still cold and rainy, so I'm excited!

        I love MPs recipes so when I had a craving for a warm fall soup I decided to give this one a go. Let me start off by saying I think my BN Squash was a bit bigger than recommended, but the flavor was still amazing. Came out a bit spicy I think which I am not usually sensitive to. Not sure if theres a bit too much cayenne? Mine is fresh and new so I can definitely taste that coming through. Maybe if I made it again Id reduce the amount of cayenne or regular pepper it calls for. Also quite thick. I thinned mine out with stock like other reviewers mentioned. Didnt measure, just added it in a bit at a time and then did the full 5-6 minute mix and it came out great and smooth. Overall very good but might need to make a few tweaks!

        The flavor was awesome! But I had to add a cup or two of vegetable broth. After I pureed it it was so thick, like butter.
